Gonna prepare some grass-fed/finished flanken-style short ribs from my local farmers’ market. Thanks to Kenny A. at Fish Hugger!
300 degrees Fahrenheit for two hours
Not sure what yet for sides. Any ideas..?
Just at the right time, too, because I’ve been feeling sluggish and out of sorts. Hungover, if you will. I need these nutrients to kick-in and curb my hunger pangs (or boredom pangs really).
Keto Chicken Skillet with Mushrooms and Parmesan
Creamy Garlic Mushroom Chicken
Creamy Parmesan Garlic Sauce
- Butter: Use real butter not a butter substitute for the best flavor. Kerigold!!
- Garlic cloves minced: Fresh garlic gives a pungent flavor that compliments the mushrooms.
- Flour: Thickens the sauce. NOPE!!
- Chicken broth: Chicken will give the best flavor.
- Heavy cream: Flavor and creaminess.
- Grated parmesan cheese: Grate your own cheese so it will melt the best.
- Garlic powder: Adds extra flavor without bulk.
- Pepper and Salt: Add more or less to taste.
- Spinach: Chopped finely. You don’t want too much bulk.

Thursday’s Meal
These bacon-wrapped stuffed chicken are stuffed with mozzarella, parmesan, and fontina cheeses are from Costco, & they take about 38-40 minutes in the oven. They’re delicious paired with wild caught Alaskan salmon burger patty, also from Costco. Ate the salmon patty with cabbage, lime, and feta cheese (Costco) in a carb balance tortilla (Costco) I shared the stuffed chicken with my brother (Mesa, psht), who stopped by to drop-off his two dogs for the weekend. We ate them with… a fork and butter knife. 😉 I think he enjoyed it. I forgot to take pics of finished products, I was too busy shoving them down.
Weiner Wednesday!
The text I sent to my nephew this morning letting him know what I plan to cook today for dinner. We’ve been trying to save money. I’ve been trying to have fun with eating healthy, and with my family almost 2,000 miles away, it’s not as fun cooking for just 1. So, I’ve been trying to have dinner with my nephew as often as I can. I’m going through our freezer and unloading some to free up some much needed space in our deep freezer.
These grass-fed polish sausages are great. I wrap these in artisan keto bread from Costco, or just recently discovered Oroweat keto hot dog buns, sauerkraut, onions, and mustard.
The spinach is organic, the goat cheese comes in a 2-pack from costco and tastes like a cream cheese dip by itself. Mushrooms are also organic, and most things I buy are Organic from Costco or Sprouts or a local farmers market, when I’m allowed. .
Tacos
It’s National Taco Day!
Tacos made from grass fed ground beef from Sprouts, cooked with organic Great Value™ chili powder, consisting of cumin, oregano, coriander, chili pepper, clove, and garlic…
I taco’d with carb balance flour tortillas (couldn’t find corn option), organic cabbage, limes from my neighbor’s massive garden/homestead, organic avocado, and organic onion.
My neph went with non-keto corn tortillas, and we won’t mention the party sized pack of Chips Ahoy cookies he asked me to buy yesterday… Or, maybe we will mention it.

I currently believe constant glucose monitoring, and/or the conclusions we’re (doctors and scientists, & I believe those I choose to believe) drawing from their results, is the way to go.. Understanding and controlling your own glucose spikes, and/or corresponding rises in insulin levels, may be an easy way to choose when, and how, certain foods affect your body (and whatever that entails) in the short and long-term.
- constant glucose monitoring & other methods of measuring blood-glucose levels internally & locally/individually
- conclusions are being drawn that sugars (etc.) cause different effects in different individuals
- and effects can differ significantly between the same individual when variables are changed
